Idaho knows potatoes, and there are a number of main courses and side dishes that contain the popular diet staple that will enhance any holiday dinner table. A recipe I've used before that in my opinion should take the place of the old, tired mashed potato one, takes flavor to a whole new level through the combination of garlic, cheese, potatoes, and parsley.

In a matter of just a few short hours, most of us will be sitting around a dinner table to enjoy the last traditional holiday meal of 2021. I'm not the kind of person who generally follows recipes when I cook, which is probably why so many of my meals haven't been fit for a swine's consumption. From time to time, however, one does catch my eye and inspire me to give it a go.

For the first time in years, I won't be hosting a meal, and I'm totally fine with it. I know there are a great deal of you out there that love mashed potatoes and gravy as a holiday side dish, but here's a recipe you should at least consider as a substitute.

Anitacooks.com has a bomb recipe for Roasted Garlic Potato wedges. Being Italian, garlic has always been a favorite ingredient of mine. I am the kind of person that will eat a spoonful of minced garlic right out of the jar, and then proceed to head directly to the bathroom to brush my teeth so my wife will stand within five feet of me for the rest of the day.

I know breaking away from serving mashed potatoes and gravy is just something many people will not consider, but if you do prepare this dish, I think it will be a hit for all at the table. The recipe takes less than 15 minutes to prep, and less than an hour to finish.
