One of the first things I found out when I moved to southern Idaho years ago was that there are many fantastic Mexican food restaurants to choose from. Some of the tastiest dishes in the Magic Valley don't come out of a traditional kitchen, but instead, they are prepared in a trailer on wheels.

I got my first taste of Magic Valley tacos years ago when the company I work for had a Twin Falls restaurant cater an event. That food came out of the kitchen of La Casita, and I've been a regular there ever since. The food there is fantastic.
